As the title says, how do you make/join another server? Does that server have a new house for you and doesnt interfere with your main one? Are there even any other servers?

There is a guide to setting up a server on the wiki:

If you set one up it will be completely independent of the main server and have it's own neighbourhood of houses.
As far as I'm aware no one else is running a public server at the moment.

can i do all that on mac, or does it have to be windows. if that was a dumb question sorry, not that good at complicated computer stuff.

From what I've heard, it's actually easiest to do on linux. I'm not sure how mac is compared to windows, though (I'd *suspect* that it's easier on a Mac, but I truly have no idea)

well since mac is basically advanced unix, kinda like linux, it will probably work. now to decide if i actually want to make a server. It would be pretty boring without a bunch of players because nobody would really do anything.

You'll need a server running php/mysql.
If you're on a mac you can set it up locally. Search for a tutorial for setting up an AMP stack for your OS and then follow the wiki guide.
